Buttermilk and Whey
"One who drinks
buttermilk never suffers (from disease). The diseases burned
out (cured) by buttermilk never recur. As "amrut”) is
to the suras (devatas), so buttennilk is to humans.
Properties :
Butter
is binding, astringent and sour to taste) sweetish in vipaka,
light in rasa, warm in veerya, kindles the digestive fire,
increases libido and destroys vata 18.
Beneficial
Effects :
Buttermilk
and whey have been used in cases of swelling, abdominal
diseases, piles 19) anorexia, splenomegaly, poisoning, anaemia,
diarrhoea 0,21, jaundice 22) hypertension 23) malaria, worm
infestations, etc. However, the use of buttermilk is
contraindicated in patients with wounds) bums and blood
disorders 18.
Recent Studies :
Anti-
Helicobacter pylori activity in vitro and in vivo of whey
fermented by a .certain strain of Lactobacillus acidophilus
has been reported .Whey was also found to Inhibit
Proplombactenum, a causative agent of acne
.Effectiveness of whey In controlling bacteriophage
infection has been proved, making it a suitable substrate for
use in industrial fermentation processes 26. On a slightly
different note, scientists from Pakistan have found whey from
goat 27 and buffalo milk 28 to be suitable replacement for
foetal calf serum in tissue culture media. This idea had also
occurred to Dr. A.D.B. Vaidya for a non-violent way of
preparing media for tissue culture.
In Mumbai too, studies have
been carried out earlier at Bhavan's College to show the
usefulness of cow's milk whey in microbiological media 29.
